At ChelseaMarket.ca, one of our core values is that we believe that you have a right to know where your food comes from and what goes into it. This includes everything that we carry in our Meat Department. As part of our meat and poultry requirements, we work closely with our farmer suppliers, ensuring that they have developed “fail-safe” practices for the quality and safety of the meat that we offer our customers every day. As well, we’re passionate about the comfort, safety, health and natural behaviors of the animals as they progress through the production process.

Our Meat and Poultry Requirements are Stringent

To sell meat (or any products that contain meat) at ChelseaMarket.ca, our farmer partners must first meet these criteria:

 

1. Animals must never receive antibiotics. Obviously, sick animals must get humane medical treatment, but meat from antibiotic-treated animals cannot be sold at ChelseaMarket.ca

2. Added growth hormones are strictly prohibited in our meats. While federal regulations prohibit the use of hormones in raising pigs, poultry, bison and goats, we also don’t allow them in the meats sold at ChelseaMarket.ca

3. No animal by-products are allowed in the feed of the animals that will be carried at ChelseaMarket.ca. This includes feather meal and rendered fat

4. No crates, cages or tethers are permitted during the animal’s daily life. This includes, but is not limited to gestation crates and farrowing stalls for sows.

5. Meat from cloned animals is absolutely not permitted at ChelseaMarket.ca

Verification Must be Provided for:

 

1. A clear traceability audit system that tracks herds or flocks from each farm through to slaughter

2. A comprehensive recall program

3. Full disclosure of management practices and feed rations

4. A robust internal audit program to monitor compliance with our standards, as well as with governmental regulations and the producer’s own protocols

Our Beef

Steak

With the beef that you find at ChelseaMarket.ca, you get great-tasting meat from animals raised to our standards:

 

  • No antibiotics (ever!)
  • No supplemental growth hormones
  • No animal by-products in feed
  • Raised on pasture or range for at least 50% of the animal's life

 

From local, grass-fed steak to frozen meatballs, we offer a variety of local choices for everyday and special occasions. Other items in our Meat Department that are made with beef must come from animals raised without antibiotics or added growth hormones and must be made without hydrogenated fats and artificial colors, flavors, preservatives and sweeteners. Additionally, synthetic nitrates and nitrites, and irradiation are prohibited.

Beef labeled as “organic” must come from animals fed organic (which also includes non-GMO) feed, that were given fresh air and outdoor access, and were raised without antibiotics or added growth hormones.

Our Chicken

We care where our chicken comes from! This includes details from how it was raised to how it was processed. All of the chicken available at ChelseaMarket.ca is raised on vegetarian feed only. (This means that you don't have to worry about other animal by-products being in the food that you are consuming.)

When you purchase chicken from ChelseaMarket.ca, you know that you are getting great-tasting meat from animals that were raised to the following strict standards:

  • No animal by-products in the feed given to the chickens
  • No physical alterations
  • Appropriate litter provided for comfort and to satisfy natural foraging instincts

From organic, kosher, skinless, boneless chicken breasts & thighs to gluten-free chicken nuggets, ChelseaMarket.ca offers a variety of locally grown choices for everyday and special occasions. Other items in the meat department that are made with chicken must come from animals raised without antibiotics or added growth hormones and must be made without hydrogenated fats and artificial colors, flavors, preservatives and sweeteners. Additionally, synthetic nitrates and nitrites, and irradiation are strictly prohibited in all the chicken that we offer.

All of our fresh turkey must meet the standards listed above and be animal welfare certified by a third-party auditor. Additionally, synthetic nitrates and nitrites, and irradiation are prohibited.

All of the bacon, ham, sausages and hot dogs offered by ChelseaMarket.ca are produced with no artificial ingredients, no synthetic nitrates or nitrites and must not have been irradiated during their production.

Organic Meat and Poultry

As is the case for all products labeled as “organic”, meat products must adhere to very specific, federally regulated standards, including for organic processing. Meat and poultry labeled as “organic” must come from animals fed organic feed (which also means non-GMO feed), they must be given fresh air and outdoor access, and they must be raised without the use of any antibiotics or added growth hormones.

Grass-Fed Beef and Lamb

To be considered “grass-fed”, the animal must have had continuous access to pasture during the growing season, and cannot be fed grain or grain by-products.

Basic Animal Welfare Standards

If you’re looking for more than great taste and freshness in meat and poultry and that how the animals are treated during the entire production process, we’ve got good news for you! We believe that quality of the meat that is on your table has everything to do with quality of care that is employed in raising the animals. We have worked very hard to develop true partnerships with many local farmers to ensure that the treatment of animals being raised is guided by care, responsibility and respect. The result of this hard work shows in the meats and poultry that we are now able to offer at ChelseaMarket.ca.

No Added Growth Hormones

Giving hormones to animals raised for meat definitely accelerates their growth. It results in getting animals to market faster and reducing feed costs. This may be good for the “bottom line” of the large meat packers and the supermarkets that produce and sell these meats, but we believe that it most definitely is not good for you! We believe that good farm management and focusing on the animals' well-being is all the growth incentive that they need to thrive! Our quality standards for our Meat Department strictly prohibit the administration of growth hormones.

No Antibiotics

Antibiotics

Farm animals are given antibiotics for different reasons. Some producers administer them regularly to prevent disease and to promote growth. We believe that this is an unnecessary practice. We also believe that the health of livestock is maintained by good farm management, including innovative practices and alternative remedies that have been to be found effective in treating animals. To ensure that sick animals do not suffer or if an animal’s injury or illness does not respond to alternative methods, we wholeheartedly agree that the animal should be treated. Regretfully, however, the meat from that diseased animal cannot be offered at ChelseaMarket.ca.

Animal Care

Caring for farm animals goes far beyond the prohibition of antibiotics and added growth hormones. We also consider the comfort, physical safety and health of the animals to be important factors. For everything in our Meat Department, we require producers to verify that their practices meet the ChelseaMarket.ca requirements for animal health and well-being. We do this by regular farms visits and an ongoing dialogue with our farmer suppliers.

Processing

The manner in which the animals are raised and treated on the farm or is only part of the equation. We also require at least annual government audits of animal welfare at all of our meat suppliers’ slaughter plants including:

 

  • The overall condition of the animals upon arrival
  • The use of calm and efficient animal unloading procedures
  • Assurance that the animals are processed with patience, skill and respect
  • A well-designed and properly maintained facility that ensures the quiet movement of the animals
  • Non-slip flooring and ramps to reduce the risk of injury to the animals
  • Critical stunning efficacy requirements
    • 99% “Successful Stun” on the first attempt
    • 100% of animals are unconscious before slaughtering
  • Proper condition and maintenance and regular testing of all equipment

Mandatory Government Audits

To ensure the best quality in ChelseaMarket.ca and at your table, we require that all our meat supplier partners undergo mandatory quarterly audits of their slaughter and processing facilities. Food safety audits of slaughter and meat processing facilities include:

 

  • Cleanliness of external areas
  • Facilities, equipment and fabrication practices
  • Coolers, freezers, chilled transport
  • Rodent and insect control
  • Personal hygiene
  • Sanitation
  • Condition and cleanliness of staff areas
  • Documentation
